The kids and I have been under the weather this past week. I ended up taking the kids to the pediatrician this morning to find out Savannah has a ear infection and needs breathing treatments. Jackson has a virus that will hopefully pass soon! I also went to the doctor and got something for this horrible cough I can't seem to kick and a zpack for bronchitis. Hopefully, we will all have a better nights sleep. With a day full of doctor visits, I wasn't sure what I was going to fix for dinner since I didn't take anything out to cook. Ground beef is usually the quickest thing to thaw, so I decided to try a cheeseburger soup. Let me just say it was oh so yummy!! Savannah hasn't been eating much lately at all and she finished her bowl before any of us! I found the recipe on All Recipes, but I left a few ingredients out and added a couple, mainly because I didn't have all the ingredients. It still turned out great!
Cheeseburger Soup
Ingredients
• 1/2 pound ground beef (I recommend using 2lbs)
• 3/4 cup chopped onion
• 3/4 cup shredded carrots
• 3/4 cup chopped celery
• 1 teaspoon dried basil
• 1 teaspoon dried parsley
• 4 tablespoons butter
• 3 cups chicken broth
• 4 cups cubed potatoes
• 1/4 cup all-purpose flour
• 2 cups cubed Cheddar cheese
• 1 1/2 cups milk
• 1/4 cup sour cream
Directions
1.In a large pot, melt 1 tablespoon butter or margarine over medium heat: cook and stir vegetables and beef , until beef is brown.
2.Stir in basil and parsley. Add broth and potatoes. Bring to a boil, then simmer until potatoes are tender, about 10-12 minutes.
3.Melt the remainder of butter and stir in flour. Add the milk, stirring until smooth.
4.Gradually add milk mixture to the soup, stirring constantly. Bring to a boil and reduce heat to simmer. Stir in cheese. When cheese is melted, add sour cream and heat through. Do not boil.
* I did not have celery or parsley, so I left those items out. I did not have enough chicken broth, so I combined chicken broth with vegetable broth to make sure I had enough broth in the soup. I also used 2lbs of beef and I would highly recommend that. I don't think a half pound will be enough. I also added some salt and pepper. You can never go wrong with that! With these minor changes, it was still great!!
